Description

Wineries come to us with the same starting point: they know the annual crush and the tank farm footprint, and they need fermentation temperature to hold inside a narrow band without a cellar crew checking it overnight.

We build 3500L, 5000L and 10000L working volumes, with the shell sized to leave 20–25% headspace for active red fermentations. A 5000L unit is the common middle ground for a small commercial winery running 8–12 lots; 10000L suits single-variety programs where pump-over is mechanical.

Materials and fabrication

Standard construction is SUS304, with 316L wetted surfaces when musts run high in acid or chloride. Shell thickness is 3 mm at 3500L and 4 mm at 10000L. Interior welds are ground flush, passivated, and polished to Ra ≤0.8 µm. Reds tolerate a rougher finish; white juice and long cold settling do not.

Cooling jackets and pressure rating

Dimpled jackets cover the cone and lower shell. On a 10000L tank we usually specify 3.5–4 m² to pull a 20 °C fermentation down within 24 hours on 12 °C glycol. Working pressure is 0.2–0.3 MPa with a sanitary pressure/vacuum relief valve, and that rating goes on the nameplate for inspection.

Connections and CIP

Top manway, cone racking arm, tri-clamp sample valve, CO2 vent, and a rotary CIP spray ball. One spray point handles 5000L; larger tanks get two. Everything is tri-clamp so the cellar can reroute lines without welding.

Specifications

Model Working volume Shell / wetted Jacket area Design pressure
FT-3500 3500 L 3 mm SUS304 / 316L 1.8 m² 0.2 MPa
FT-5000 5000 L 3 mm SUS304 / 316L 2.5 m² 0.25 MPa
FT-10000 10000 L 4 mm SUS304 / 316L 3.5–4 m² 0.3 MPa

Common questions

Can one tank handle reds and whites? Yes, if the racking arm is adjustable and you accept a finer interior finish than reds alone would need.

How much glycol capacity? Budget roughly 1 kW of chiller per 1000L in active fermentation, then check your coldest ambient condition.

What about certification? Pressure test reports, material certificates, and passivation records ship with the tank on request.

Tell us your batch size, wine type, number of fermentation tanks and available space. We can recommend the tank volume, cooling area and configuration for your winery.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
