Description

Most white wine lots are decided in the first ten days. Ferment warm and the aromatics go flat; let the temperature swing and the yeast stalls halfway through. A 3500L tank with a dimple cooling jacket and an 80mm polyurethane insulation layer holds 12–16°C through active fermentation without the chiller running flat out.

Inner shell is 3mm stainless, outer shell 2mm, standard 304 or 316L where the juice is high in chloride or the tank doubles for cold stabilization. Internal finish is 2B as standard and can be polished to Ra ≤ 0.8 µm for lees contact or skin maceration. Product-contact welds are full-penetration TIG, ground flush, then pickled and passivated. This is the line item that gets skipped when quotes are compared. An unpassivated seam pits within a few vintages, and nobody finds out until there is a pinhole behind the jacket.

Cooling is split into three or four independent zones so you can pull the top of the tank harder during the first 48 hours and ease off later. We size jacket surface area against your actual glycol supply temperature, usually −5 to −2°C, not against a generic number. Tanks can be supplied flat-bottom or with a 60° cone, on four adjustable legs or with a skirt for a fixed cellar floor.

Standard ports: 400mm top manway, CIP spray ball, thermowell, sample valve, racking arm, airlock or bung fitting, and a level gauge. Insulation can be stainless-clad for washdown rooms or left in a galvanized jacket where appearance does not matter.

Questions we get before ordering

Conical or flat bottom? A cone helps with lees removal and racking on varietals you fine heavily. Flat bottom is cheaper and fine for juice that is filtered or centrifuged before fermentation.

How much cooling area do I need? It depends on your glycol temperature and how fast you want to pull down after inoculation. Send us both and we will calculate it.

Can it be CIP cleaned in place? Yes, with a spray ball sized to the tank diameter and a pump that reaches 1.5–2 bar at the nozzle.

Tell us your batch size, wine style, number of fermentation tanks and available space. We can recommend the tank volume, cooling area and configuration for your cellar.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
