Description
Built for wine, not repurposed from beer
A wine tank looks simple from the outside. What decides whether it works is inside the jacket, at the weld seams, and in how the vessel behaves when a 10,000 L lot drifts from 24 °C down to 12 °C over three days. Dimple plate cooling spreads a large heat transfer surface across the cone and lower cylinder, so glycol at moderate flow rates holds fruit temperature without cold bands or stratification.
Fabrication choices we make
Shells are rolled from SUS304 (2B finish) as standard. SUS316L is worth the premium for high-acid musts, extended lees contact, or cellars where chloride exposure is a real concern. Interior welds are full penetration, ground flush, then pickled and passivated. Product-contact surfaces can be polished to Ra ≤ 0.8 µm; a mirror finish rarely changes microbiology if CIP is run correctly, and it adds cost.
Dimple plate jackets are spot-welded to the shell, hydro-tested at 6 bar, and rated for 3 bar working glycol pressure. Insulation runs 50–100 mm PU foam under stainless or galvanized cladding, depending on whether the tank stands indoors or on an open crush pad.
Top, bottom and fittings
Dished top with a 400–500 mm manway, CIP spray ball, sample valve, racking arm, pressure/vacuum relief valve, and an inert gas port. A 60° conical bottom helps with lees separation and solids discharge; for storing already clarified wine, a sloped bottom with a side racking arm is often the cheaper and more practical choice.

Questions we get before quoting
How do I pick a volume? Size the tank at roughly 110–120% of the largest batch you expect, leaving headspace for foam and inert gas.
Do I need a cone? Only if you are fermenting on skins, dropping lees, or dumping solids. Pure storage tanks usually do not need one.
How is temperature held? Glycol through the dimple jacket, controlled by a solenoid or modulating valve on a tank probe. Two cooling zones give tighter control above 5000 L.
Can it be customized? Yes — outlet height, racking arm angle, extra ports, pump-over fittings, and leg or skirt mounting are all built to your cellar layout.
Tell us your batch size, wine type, number of tanks and available space. We can recommend the tank volume, cooling area and configuration for your winery.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
