Description
A variable capacity tank earns its place when you press small lots from different blocks and still want one vessel that handles all of them. The floating lid rests directly on the must or wine surface, so headspace changes with the fill level instead of staying fixed. Less oxygen pickup between pressing and barrel, and no inert gas blanket needed for short-term storage.
We build 800L, 1000L and 2000L as standard, but shell diameter and height shift with volume. The 800L and 1000L lids are light enough for one person to place, inflate and seal by hand. On 2000L units the lid gets noticeably heavier, so we usually fit a lifting arm or small winch so a single operator can still manage it safely at the top of the tank.
Material choice matters more than most buyers expect. 304 handles juice and must where the wine stays dry and sulfite levels are normal. 316L is the better call when your cleaning water runs high in chloride, when lees contact is long, or when sanitation is aggressive. Interior welds are ground and passivated, wine contact surfaces get a sanitary finish, and exteriors are left 2B mill or lightly brushed. The lid gasket is food-grade EPDM or silicone, inflated with a standard hand pump.
Standard fittings: racking valve, sample valve, lid inflation port, top vent or airlock port. Tell us before fabrication if you plan CIP — we weld in a spray ball and a dedicated CIP port rather than making you clean through the manway.

Common questions
Size to largest lot or total harvest? Largest single lot. Oversized tanks leave a thin layer of wine under a wide lid, which is harder to manage than a slightly full tank.
Will the lid hold pressure? No. These are atmospheric vessels. If you need pressure, that is a different tank design with a rated shell and relief valve.
How is it cleaned? Hand scrub on the shell, lid gasket removed and soaked. Add CIP hardware at build time if you want automated cycles.
Tell us your lot size, varietal, number of tanks and ceiling height. We can size the tank, lid gasket and fitting layout for your cellar.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
