Description
100HL Wine Tank Built for Cellar Work
A 100HL tank sits in a useful range for commercial wineries: large enough to move a full fermentation lot, small enough to fit a cellar layout without custom rigging. This vessel handles red and white fermentation, settling, and short-term storage. We build it with a dimple cooling jacket on the cone and sidewall so juice or must can be chilled during active fermentation and held at target temperature before barrel or bottling work.
Material choice follows the wine and cleaning regime. Standard tanks use SUS304 for red and white programs. For high-acid whites, extended lees contact, or aggressive sanitation cycles, we can supply 316L on wetted surfaces. Welds are full-penetration where product contact requires it, then ground and passivated. Interior finish typically 2B or pickled and passivated; if you need easier tartrate removal, we can polish to a lower Ra. Dimple jackets are spot-welded to the shell, leak-tested, and covered with insulation and a stainless or powder-coated cladding.
Practical Details
- Top manway with gasket and clamp, or bolted cover
- Racking port, sample valve, CIP spray ball, and thermowell
- Dimple cooling jacket zones for cone and lower sidewall
- Adjustable leveling feet or skirt with anchor points
- Optional air vent, pressure relief, and glycol inlet/outlet
Red fermentation usually needs more cooling area than white juice settling. We size jacket coverage around your must temperature, pump-over routine, and ambient cellar conditions. If you plan whole-cluster work, tell us before fabrication. That changes manway size, cone angle, and drain design.

FAQ
Can one tank handle red and white wine? Yes, but cooling area and cleaning need review. Red cap management and white settling pull different duty from the jacket.
Why dimple jackets? They give even heat transfer without a bulky external shell. That helps control fermentation temperature and reduces glycol volume.
How do we clean it? A fixed CIP spray ball with correct flow and return path is standard. We can match the spray ball to your pump and caustic cycle.
What do you need for a quote? Batch size, wine type, expected fermentation temperature, glycol supply temperature, available height, and connection preferences.
Tell us your batch size, wine type, number of tanks, and available space. We can recommend tank volume, cooling area, and configuration for your winery.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
