Description

What these tanks are built for

Volumes here run from 1000 L to 10000 L, and the jacket area scales with the tank instead of staying fixed. A 1000 L unit doing small varietal lots carries less cooling surface per liter than a 5000 L tank pushed through a fast, warm primary. We size dimple plate coverage against your must temperature, cellar ambient, and the coldest glycol your chiller actually delivers in August.

Materials and fabrication

304 stainless handles standard wine, cider, and most fruit musts. When the same cellar runs high-acid juice, chloride-bearing water, or aggressive caustic CIP, we switch to 316L. Interior welds are ground flush, passivated, and checked with a ferroxyl test before the tank ships. Exterior surfaces get either a 2B mill finish or a #4 polish if the tank sits in a visible tasting area. Dimple plates are laser welded to the shell, which keeps the thermal contact tight and avoids the warping that comes with stitch-welded channels.

Insulation thickness matters more than most buyers expect. Fifty millimeters of polyurethane keeps a 5000 L tank stable through a 10 C night swing; thinner sections force the chiller to run longer cycles and shorten compressor life.

Where these tanks fit

Small craft wineries use the 1000 to 2000 L sizes for trial lots and blending work, often with a single cooling zone. Commercial cellars running 4000 to 10000 L typically want two or three zones so cone and sidewall can be controlled independently. Tanks with a cone bottom and full jacket also suit kombucha, hard seltzer, and fruit juice concentration.

Questions we get from cellars

How do I know the tank volume I need? Start from usable must volume plus 20 to 25 percent headspace for foam and cap. A 4000 L tank holds roughly 3200 L comfortably.

What pressure can the tank take? Standard builds are rated for a low working pressure with a sized relief valve and a pressure gauge on the top manway. Never operate with the relief valve plugged, and confirm the rating against your local code before commissioning.

Can I CIP it in place? Yes, with a rotating spray ball sized to the tank diameter and a pump delivering the flow the ball needs. Undersized pumps are the most common reason a spray ball fails to reach the cone.

What connections should I plan for? Racking outlet, sample valve, top manway, CIP return, glycol in and out, and a thermowell for the controller probe. Give us your piping layout and we will place ports to match.

Tell us your batch size, wine type, number of tanks and available space. We can recommend tank volume, cooling area and configuration for your cellar.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
