Description

For partial fills, not full tanks

A floating lid tank solves one problem cleanly: you have 6,000 liters of wine and a 10,000-liter vessel standing empty. Rather than buying a second tank or racking into something smaller, the lid settles onto the wine surface and holds an inert gas blanket above it. That headspace is where oxidation and volatile acidity begin.

The lid is a dished stainless plate with an inflatable EPDM tube around the rim. Inflate it to about 0.2 bar and the tube presses against the shell. Wine level drops as you rack; the lid follows it down. Two gas ports on top let you purge with nitrogen or argon and keep a light positive pressure while the wine rests.

How we build it

Shell and bottom are 304 stainless, 3 mm at 5,000 L and 4 mm at 10,000 L. Juice with a high chloride load, or a cellar near the coast, is better served by 316L. Interior welds are ground, pickled and passivated; standard finish is 2B, with Ra 0.8 µm available where microbial control matters. Dimple jackets cover the side wall and bottom, sized at roughly 1.0-1.5 m² of cooling surface per 1,000 L for temperature hold. Insulation is 50-80 mm polyurethane under stainless cladding, so the tank holds 12 °C in a warm cellar without the chiller running flat out.

On a 10,000 L unit the lid weighs about 70 kg. Two lifting lugs and a small hoist make removal practical when the tank needs a full manual clean; a CIP spray ball handles routine cycles.

Capacity 5,000 L / 10,000 L (2,000-30,000 L custom)
Material 304 or 316L stainless
Shell thickness 3 mm / 4 mm
Jacket Dimple plate, side + bottom
Insulation 50-80 mm PU, stainless cladding
Lid Inflatable EPDM tube, 2 gas ports, lifting lugs
Connections DIN 11851 or tri-clamp; sample valve, racking arm, CIP ball
Testing 3 bar hydro on shell, 0.3 bar lid seal test

Questions we get before quoting

Can I ferment reds in it? No. Red fermentation needs an open top for punch-down and cap management. This vessel is for settling, storage, and temperature control of white juice and wine.

Does the floating lid hold pressure? It seals; it is not a pressure vessel. Blanket pressure stays in the millibar range.

Can the lid stay in during CIP? Raise and secure it. The shell gets sprayed, the lid is cleaned separately.

Sizing usually comes down to your largest single lot, not your total volume. Tell us your batch size, wine type, number of tanks and available ceiling height. We can recommend the volume, cooling area and lid configuration that fits the cellar you actually have.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
