Description
A 100 HL open top fermenter is normally specified by wineries that need real access to the cap during red fermentation — manual punch-down, pneumatic punch-down tools, or whole-cluster work that a closed tank simply will not allow. We build these as atmospheric vessels, so there is no head pressure, no relief valve sizing debate, and no confusion about operating limits.
Material selection usually lands on AISI 304 for standard musts. We move to 316L when the same tank will see high-acid musts, heavy chemical CIP cycles, or long soak periods with skins. Product-side welds are full penetration, ground, and passivated; interior finish is 2B or #4, with Ra ≤ 0.8 µm available if you are running sensitive whites in the same vessel. The shell is insulated with 60–80 mm polyurethane and clad in 304 sheet so the tank does not sweat in a cold cellar.
Cooling matters more than most buyers expect at this volume. A 10,000 L must load generates heat fast, and an undersized jacket will leave you fighting fermentation temperature instead of controlling it. We size the dimple jacket from your fermentation curve and ambient cellar temperature, not from a nameplate volume.

Common questions
Why open top instead of closed? Cap access. If your protocol includes punch-down or open-top maceration, a closed tank forces you into pump-over only.
Can it be CIP cleaned? Yes, with a properly sized spray ball and a pump that reaches the required flow. The lid needs to be closed during the cycle.
How do I tie it into the cold loop? We supply jacket inlet and outlet connections sized to your glycol header; you tell us supply temperature and flow rate.
Send your batch size, wine type, tank count, and available floor space. We will come back with volume, cooling area, fitting layout, and the configuration that actually fits your cellar.

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
