Description

Wineries and juice plants usually arrive at this tank with the same requirement: hold must or juice for weeks without temperature drift, and use the same vessel for fermentation and cold settling. That is how we build them, from 2,000 L to 10,000 L — one shell geometry scaled across volumes, with fittings placed around the way the tank is actually operated.

Material and fabrication

Material follows the liquid. SUS304 is sufficient for juice, white must and normal CIP cycles. Where red wine sits on skins, where acidity is high, or where SO2 and juice contact are prolonged, we put SUS316L on the wetted surfaces. Interior welds are ground flush, pickled and passivated; mirror polish to Ra ≤ 0.8 µm is available. Dimple or pillow-plate jackets on the cone and lower shell handle cooling, and warm-water circuits can be added for malolactic or cold stabilization.

Where these tanks go

Micro-wineries running 2,000–3,000 L batches often take a single tank with a racking arm and a 60° cone. Contract juice packers and cider houses tend to order 5,000 L and 10,000 L units in banks, sharing one glycol loop and one CIP skid. Tank farms with limited headroom get a shallower cone and a wider shell.

Technical specifications

Volume Shell Ø Overall height Jacket area Bottom
2,000 L 1,400 mm 2,200 mm 4.5 m² 60° cone
3,000 L 1,600 mm 2,400 mm 5.8 m² 60° cone
4,000 L 1,700 mm 2,600 mm 6.6 m² 60° cone
5,000 L 1,800 mm 2,800 mm 7.5 m² 60° cone
10,000 L 2,200 mm 3,400 mm 12.0 m² 60° cone

Standard build: 304 or 316L shell, 3 mm plate, 1.5–2 bar jacket, 0.2 MPa working pressure on the headspace with a set safety valve, tri-clamp DIN fittings, racking arm, sample valve, 400 mm manway, rotating CIP spray ball, and adjustable feet or skirt. Passivation certificates and pressure test reports ship with each unit.

Questions we get before an order

Do I need a conical bottom? If you rack off lees, dump yeast, or want a single vessel for fermentation and settling, yes. Flat-bottom tanks only make sense for short-term juice storage.

Why does pressure rating matter? The relief valve setting has to match the highest pressure your process produces — including any CO2 blanket or transfer pressure — not the highest the shell can survive.

How is CIP handled? A rotating spray ball sized to your tank diameter, plus a dedicated CIP return port at the cone. Undersized spray balls are the most common cause of slow cleaning.

Tell us your batch size, wine or juice type, number of tanks and available space. We can recommend the tank volume, cooling area and configuration for your plant.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
