Description
1000L Variable Capacity Wine Tank with Floating Lid
A variable capacity tank earns its place when lot sizes change faster than the tank schedule. With a 1000 L nominal shell and a floating lid that rides on the wine surface, the same vessel holds anywhere from roughly 500 L to a full 1000 L with very little headspace. Small-lot fermentations, blending trials, and juice that arrives in uneven volumes fit into one tank instead of three.
Build details
Shell and bottom are formed from 304 stainless as standard. We switch to 316L when high-acid musts or chloride exposure in the cellar are a real concern. Plate thickness starts at 2.0 mm for the shell and 2.5 mm for the bottom, which keeps the tank stable at full load and leaves enough material for a clean weld. Interior welds are ground and passivated, so tartrate and lees release with a normal CIP cycle rather than a scraper.
The lid decides how well the tank works day to day. Two sealing methods cover most cellars: an inflatable tube pressed against the shell wall, or a gasketed skirt lid with adjustable tension. Inflatable seals hold a tighter gas barrier on shells that are slightly out of round; skirt lids are easier to clean and tolerate rougher handling.
- Sample valve and racking port at the lowest practical point
- CIP spray ball in the lid, with vent and airlock connection
- Volume markings or dipstick reference for fill checks
- Optional dimple cooling jacket for temperature control

Questions we get before quoting
Can the lid stay in during fermentation? Yes, but gas has to leave. Use the lid vent with an airlock, and expect to check the seal daily on an active ferment.
Will a jacket fit this size? Dimple jackets on the shell are common at 1000 L, though the floating lid limits cooling from above, so size the jacket area on the full volume, not the working volume.
How is volume confirmed? Calibrated markings or a dipstick chart, both referenced to the tank before shipment.
Send us the volume range you actually run, the must type, whether you need cooling, and the door width on the way into the cellar. That is enough for us to set the lid type, jacket area, and fitting layout for your site.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
