Description
White wine fermentation is a temperature-control problem before it is a capacity problem. Juice that warms up too fast during the first 48 hours loses the aromatics you spent the whole harvest protecting, and no amount of later blending brings them back. That constraint shapes how we build this tank: dimple cooling jacket, eccentric conical top, and a base that can be moved without a crane.
The top cone is offset rather than concentric. The manway sits to one side, which leaves the shoulder open for a CIP spray ball to reach without shadowing. On a concentric cone the spray pattern commonly leaves a dried ring of lees above the liquid line, and someone ends up climbing in with a hose. With the eccentric layout, a rotary spray ball at 2–3 bar covers the full dome and the sidewall in one pass.
The dimple jacket is welded directly to the shell, giving more heat-transfer area per unit of tank surface than a zoned half-pipe coil. Running 28–30% propylene glycol at −4 °C, most customers see a 2–3 °C approach between jacket and must, which is enough to crash a 5,000 L tank from 20 °C to 8 °C overnight. Jackets are split into two to four zones with individual valves so you are not chilling the full volume when the tank is half full.
Fork slots are welded under the base frame. Small and mid-size wineries rarely have a permanent crane, and moving a tank between the crush pad and the barrel room with a forklift is normal practice. The slots are sized for standard 1,200 mm forks and reinforced with internal gussets.
Wetted surfaces are 304 stainless at 3 mm, with 316L available for coastal sites or aggressive chloride-based sanitation. Interior welds are ground, pickled and passivated; we hold 0.8–1.2 µm Ra on request for tanks used with delicate white varietals. The outer shell is 304 with a #4 finish over 50–80 mm polyurethane insulation.
| Parameter | Range |
|---|---|
| Total volume | 500–20,000 L |
| Inner shell | 304 / 316L, 3 mm |
| Cooling jacket | Dimple plate, 2–4 zones |
| Working pressure | 0.2 MPa (test 0.4 MPa) |
| Manway | 400 mm, eccentric conical top |
| Outlets | DN50 butterfly, racking arm |
| Base | Adjustable legs or fork slots |
How do I size the jacket? Send the must volume, the temperature drop you need, and the time window. Jacket area is calculated from those three numbers, not from tank volume alone.
Can it run under pressure? Yes, to 0.2 MPa with a properly sized relief valve set at or below that rating. Never rely on the tank alone — the valve is the protection.
What about CIP and racking? We supply the spray ball, DIN fittings and racking arm ports to match your existing pump and glycol loop.
Tell us your batch size, wine style, number of tanks and available floor space. We can recommend tank volume, jacket area and fitting layout for your cellar.

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
