Description
Why ullage control drives the spec
A variable capacity tank exists to solve one problem: headspace. When a cellar racks a 3000L lot down to 1200L, the empty volume above the wine fills with air and oxygen pickup begins within hours. A floating lid, an inflatable gasket that rides directly on the wine surface, closes that gap without forcing a top-up or a full inert gas sweep.
Materials and fabrication
We build these in AISI 304 for routine wine contact and 316L where high-chloride cleaning or long storage of high-acid must is expected. Shell thickness runs 2.5 to 3 mm; the 5000L body gets 3 mm to stay round under lid tube pressure. Interior welds are ground, passivated and finished to roughly 0.4 to 0.6 µm Ra, which holds up to normal caustic and citric cycles. The lid is a dished plate with an inflatable food-grade EPDM or silicone tube held at about 0.2 bar through a small regulator on the wall bracket.
Choosing a volume
Size selection follows the cellar, not the catalog. 1000L covers trial lots and reserve blending. 2000L and 3000L carry most 20,000 to 80,000 bottle operations, where one tank often switches between fermentation and storage across a vintage. A 5000L vessel pays off when floor space is tight and you would rather consolidate two partial lots than buy another tank.

Questions we get from buyers
Can the lid stay in during fermentation? Usually it goes in after the cap drops or after pressing. Fitting it over active CO2 release just traps foam under the plate.
What stops the seal from creeping? Tube pressure against a straight, polished wall section. Out-of-round shells are the main cause of slow leaks, which is why we check diameter at three heights before shipping.
How is it cleaned? A spray ball through the top manway covers the shell; the lid and tube are cleaned separately by hand and air dried before storage.
Have your batch size, ceiling height, available footprint and cleaning chemistry ready before requesting a quote. Those four details settle shell thickness, finish grade and seal compound faster than any specification sheet. Tell us your batch size, wine type, number of tanks and available space. We can recommend the tank volume, cooling area and configuration for your cellar.

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
