Description
A variable volume tank makes sense when a cellar never runs at nominal capacity. A 2000 L shell with a floating lid lets you ferment 1200 L one month and a full 2000 L the next, so you are not paying for headspace you have to blanket with nitrogen. The lid rises and falls with the wine level, keeping the ullage layer thin and the SO2 dose predictable.
Build and materials
Bodies are 2.0 mm SUS304 as standard, with 316L available for cellars on aggressive chloride water or heavy peracetic cleaning. The floating lid is a dimpled 1.5 mm disc with an inflatable food-grade EPDM gasket; the inflation valve sits above the liquid line so you can adjust the seal without opening the tank. Interior is 2B mill finish with welds ground flush at the bottom radius and pickled and passivated afterward. Legs are 304 tube with adjustable feet, sized so a pallet jack or floor drain still works under the outlet.
Cooling and connections
Dimple jackets on the shell give roughly 1.5–2.0 m² of cooling surface on this size, which is enough for a 25 °Brix ferment and a crash cool to 8 °C in a reasonable overnight window with 30% glycol at 0 °C. Expect a 40 DIN racking outlet, 50 DIN bottom drain, thermowell, sample valve and a CIP spray ball under a hinged top door. These tanks breathe; they are not pressure vessels. Vacuum and pressure relief is fitted as standard, and if you need 1 bar working pressure for sparkling base or transfer, tell us at the quotation stage — the shell thickness and closure change completely.
Where they fit
Small wineries use them as combination fermenter and storage, and as a blending tank before bottling. Larger cellars keep two or three for trial lots, saignée volumes and topping wine.

FAQ
Can one tank ferment and store? Yes, and most buyers use it that way. Just confirm the lid gasket is rated for the alcohol and SO2 levels you run.
How do I clean it? A spray ball plus a hinged top door covers most cellars. If you CIP automatically, we position the ball to hit the shoulder where tartrate builds up.
Flat or conical bottom? Sloped flat bottoms empty cleanly and cost less. Cones help when you want compact lees and easier racking on heavy reds.
Send us your lot sizes, wine style, glycol supply temperature, available floor space and the fittings your pump and hose already use. We will size the cooling area, lid seal and port layout before anything is cut.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
