Description
Red fermentation is a solids problem
Grape skins float. In a 3000 L tank that cap is manageable by hand. At 8000 L it is not, and a dried cap sitting above the liquid stalls extraction and gives acetic bacteria an opening. A top-mounted agitator with a slow-turning paddle keeps the cap in contact with the must on whatever schedule you set at the panel. Most cellars move to a mixed fermenter before they move to a bigger building.
How we build it
Shell and cone are SUS304 as standard, SUS316L when the must is high-acid or the tank will also hold wine between vintages. Thickness runs 3 mm on the shell and 4 mm on the cone for the 5000 L and 8000 L sizes; 2 mm is sufficient at 3000 L. Product-contact welds are TIG, ground, pickled and passivated, with internal finish at Ra 0.8 µm or better. Dimple cooling jacket on the cone and lower shell, 60 mm polyurethane insulation, 304 cladding in satin or mirror depending on where the tank sits in the room.
The agitator is a flange-mounted gear motor, 2.2 kW at 3000 L up to 5.5 kW at 8000 L, VFD-controlled, with a mechanical seal rated to the working pressure. Cone angles of 60° and 90° are both available. The 60° cone drains heavy solids better; the 90° gives more usable volume under a low ceiling.
Where these tanks work
Red wine production, grape brandy mash, fruit cider, and breweries running fruit or sour programs. Anywhere the ferment carries solids that float or settle and has to be brought back into the liquid.

Questions we get before an order
Do I need the agitator, or is pump-over enough? Pump-over works, but it needs a pump, a hose, and someone in the cellar twice a day. When labor is the constraint, the agitator pays for itself in one harvest.
Can it hold pressure? These are low-pressure vessels, 0.2 MPa design, with a safety valve sized to protect the shell. If you need bunging pressure above that, say so at quoting stage.
What about cleaning? Spray ball, cone-tip drain, racking arm above it. Every fitting is tri-clamp so it can be pulled and inspected.
Send us your batch size, what you are fermenting, how many tanks you need, ceiling height and door width. Those numbers decide volume, cone angle, and whether the tank ships whole or in sections.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
