Description

What This Tank Is Actually For

A 5,000 L vessel is a common sweet spot for cellars producing 30,000 to 80,000 bottles a year. It usually does two jobs: settling juice after pressing, and holding finished wine between filtration and bottling. Both punish oxygen pickup and temperature swings, so we build these differently from a plain water tank.

The sizing mistake we see most often is buying for the biggest lot of the season. A 5,000 L tank filled to 3,000 L leaves a large headspace, and that is where oxidation and volatile acidity begin. If your lots vary, two 2,500 L tanks usually work better than one 5,000 L unit.

Material and Fabrication

Shell and bottom are 304 stainless with a 2B interior finish. Wine does not need the mirror polish used in dairy or brewing; 2B is easier to keep clean and cheaper to build. We move to 316L when cleaning water runs high in chloride or the product is high-acid fruit wine. Shell thickness is 2 mm to 3 mm, heavier on dished bottoms supported by legs.

Cooling jackets are dimple-plate welded directly to the shell, covered with 80–100 mm polyurethane insulation and a 304 cladding skin. Interior welds are TIG, argon purged, ground, and passivated. Each unit ships with a top manway, racking arm, sample valve, CIP spray ball, and an adjustable pressure-vacuum relief valve.

Questions Buyers Ask Us

Do I need a conical bottom? For storage only, a sloped bottom with a racking arm is enough and costs less. Cones matter when the same tank also ferments.

Can one tank do both? Yes, if the jacket area and relief setting cover fermentation heat loads. Storage-only tanks often have smaller jackets.

How does cleaning work? A rotating spray ball with a caustic loop handles routine CIP. Keep the manway large enough for someone to inspect welds by hand.

Tell us your batch size, wine type, number of tanks and available ceiling height. We can recommend the volume, jacket area and port layout for your cellar.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
