Description
A jacketed wine tank gets specified for one reason: heat removal during fermentation, not storage volume. A 10,000 L must can throw 2–3 kW of metabolic heat at peak, and that heat has to leave through the tank wall instead of through a room chiller running flat out for ten days.
We fabricate these vessels from 304 or 316L sheet — 3 mm shell on units up to 5,000 L, 4 mm above 10,000 L, with dished or cone bottoms. The dimple jacket is welded and hydro-tested at 6 bar before insulation goes on, then the tank is wrapped in 80–100 mm polyurethane and clad in 304. Interior welds are ground flush and passivated. Standard Ra is 0.4–0.6 µm; white juice programs and hard CIP cycles usually justify going finer.
Configuration points that matter
Flat-bottom tanks work for reds where you punch down by hand. Conical bottoms drain lees cleanly and suit varietals you rack early. Sloped bottoms fall between the two and are common in cider and fruit wine plants. Racking arms, sample valves, and CIP spray balls sit on separate tri-clamp ports — sharing a port between CIP and product lines is a mistake we see often. Jacket inlets get isolation valves, and the relief valve is sized to the jacket circuit, not the tank volume.

Questions we get from winemakers
304 or 316L? 304 handles standard must and wine. Choose 316L when you run high-chloride cleaning, coastal water, or acidic fruit juices.
How much jacket area do I need? Depends on your glycol temperature and fermentation speed. Send us batch size and target drop rate — usually 2–5 °C per day — and we calculate it.
Can one tank do fermentation and storage? Yes, if the jacket covers the full liquid height. Partial jackets lose control once the must level drops after racking.
Tell us your batch size, wine type, number of tanks and available space. We can recommend tank volume, cooling area and configuration for your cellar.

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
