Description
What a Variable Capacity Tank Actually Does
These tanks hold a moving lid that follows the liquid level. Fill 3,000 L or 4,600 L and the headspace stays small, so oxygen pickup and aroma loss stay low through months of aging. Wineries, cideries, and kombucha producers use them for topping, settling, racking, and small-lot blending without committing to a second vessel.
Materials, Welds, and Finish
Shells are built in 304 or 316L stainless, 2 mm to 3 mm depending on volume. Internal product-contact welds are full penetration, argon purged, then ground and passivated; you should see no discoloration in the seam. Lid gaskets run food-grade EPDM or silicone — silicone is the safer call for high-acid must, vinegar, and kombucha. Exterior can be brushed or mirror polished if the tank sits in a public tasting room.
Where These Vessels Fit
Wine and cider: bulk aging, cold settling, blending lots. Kombucha and vinegar: secondary fermentation where you want low oxygen but still need CO2 to escape through the airlock or vent. Juice and spirits: holding and cold storage ahead of bottling. One thing to settle early — variable capacity tanks are atmospheric or low pressure (0.2–0.5 bar). If your process needs pressure for carbonation or push transfers, specify a pressure-rated tank with a relief valve; the floating lid is not a pressure head.
Cooling, CIP, and Connections
Dimple or channel jackets on the side wall, with 1.5 in. or 2 in. tri-clamp glycol ports. CIP runs through a spray ball in the top manway, though the lid seal on some designs still needs manual attention — confirm the geometry before you assume full CIP. Racking arms, sample valves, and level tubes are all position-dependent, so give us your piping layout.

Common Questions
Can one tank cover multiple batch sizes? Yes, that is the point. A 5,000 L body handles anything from roughly 2,000 L upward, but very low fills make lid sealing and jacket contact less effective.
Do I need a jacket if I only age red wine? Not always. Ambient cellar temperature works for some reds; whites, rosé, and kombucha usually need active glycol control.
How is the lid sealed? An inflatable gasket pressed against the shell wall, inflated to a set pressure. Over-inflation wears the gasket early.
Tell us your batch size, product type, number of tanks and available floor space. We can recommend the volume, cooling area, and fitting layout for your cellar.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
