Description
Square Fermenters for Wineries Short on Floor Space
A cube holds roughly 25 percent more volume per square meter of floor than a cylinder of the same height. That is the main reason wineries ask us for square IBC-style fermenters: existing crush pads, container loading, and barrel rooms rarely have room for another row of round tanks.
We build them in 304 stainless as standard, 316L when the must runs high in chloride or the tank doubles for juice concentrate. Sheet thickness runs 2 mm to 3 mm, chosen by volume and by whether you plan to work under pressure.
Jacket, Pressure, and Drainage
The dimple-plate jacket is welded directly to the side walls. Small coolant volume, large surface area, so a 3 hp chiller can pull 1,000 L of must from 28°C down to 16°C in a few hours without short-cycling. Jacket rating is usually 3 bar. Working pressure we normally set at 0.5–1.5 bar with an adjustable relief valve in the lid; anything higher needs thicker sheet and heavier clamps, so tell us early if you intend to move wine under gas.
Interior welds are ground flush, pickled, and passivated. Exterior welds stay visible. Polishing them costs money and does nothing for the wine.
Drainage decides the bottom style. Sloped bottom with a 2" outlet for red must with skins; flat bottom with a side outlet for white juice. Both take a rotating spray ball in the lid through a 1.5" tri-clamp CIP inlet, and we can add a sample valve, racking arm, or thermowell port if you mark them on the drawing.

Questions We Get Before the PO
One tank for red and white? Possible, but a sloped bottom and wide manway suit red work better. Wineries running both usually order two configurations rather than compromise on one.
How many tanks per chiller? Count simultaneous fermentation, not total tank count. Four 1,000 L tanks rarely crash at once; two usually do.
Square or round? Square wins on floor space and container freight. Round still wins on cleaning uniformity above 5,000 L.
What We Need to Quote
Send the batch size, must type, glycol supply temperature, available footprint, door and ceiling height, and whether the tank ships loose or in a frame. That is enough for us to fix volume, jacket area, port layout, and bottom style on a drawing you can approve. Tell us your batch size, wine type, number of fermenters and available space. We can recommend the tank volume, cooling area and configuration for your winery.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
