Description

What these tanks actually do in a cellar

Most wineries we work with have already settled how they ferment. What they still need is somewhere for the wine to rest — six months, eighteen months, sometimes three years — without oxygen pickup or temperature swings. That is a storage job, and it is not the same job a fermenter does.

We build these vessels at 500 L, 1,000 L, 1,500 L, and 15,000 L, plus everything in between. Those sizes are not interchangeable. A 1,000 L lot sitting in a 15,000 L tank leaves too much headspace and the wine oxidizes. A 15,000 L lot needs enough jacket area to actually move temperature.

Fabrication details that decide how long the tank lasts

Bodies are 304 stainless as standard. We move to 316L when the must is high-acid, the cellar sits near salt water, or the customer holds wine for distillation. Sheet thickness follows diameter — 2 mm on the small tanks, 3 to 4 mm on the large ones — with rolled shells, full-penetration seam welds, and interior welds ground flush and pickled. Wine-contact surfaces are finished to Ra ≤ 0.8 µm. Exterior is #4 brushed, or mirror polish if the tank stands in a tasting room.

Dimple cooling jackets cover the cone and lower shell. Insulation runs 50–80 mm polyurethane, clad in stainless. A 60° cone handles lees removal on the smaller units; larger tanks usually get a dished bottom with a racking arm instead.

Where they get used

Boutique wineries, custom crush facilities, cideries, and distilleries holding wine before the still. Also fruit-wine producers who want a clean, inert vessel rather than oak.

Questions we get before an order

Can one tank do fermentation and storage? Yes, if it has a jacket and a pressure-rated top. If you only ever store, skip that cost.

Do I need a conical bottom? Only if you drop lees or ferment in the same vessel. For straight storage, a dished bottom with a racking arm is easier to clean and cheaper.

How is it cleaned? A fixed CIP spray ball, a pump, and a caustic cycle. Rotating balls work too, but they need more line pressure.

Getting the sizing right

Send us your lot sizes, how long the wine stays in tank, the ambient temperature in your cellar, and your door and ceiling dimensions. Door width and ceiling height decide more tank geometry than most buyers expect. We will come back with volume, jacket area, and fitting layout.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
