Description

What This Tank Does on a Working Crush Pad

Our 2500L open top fermenter is what most small wineries buy when reds are fermented on skins and the cap gets punched down by hand or with a pneumatic punch-down tool. Open access is the point: you can taste the must, break the cap, and scrub the interior without a confined-space entry. Forklift slots welded under the base let one operator reposition a full tank without rigging a crane.

How We Build It

Shell and bottom are 304 stainless as standard, 3 mm at this volume, with 316L available when the must runs high in chloride or the tank is shared with high-sulfite juice. Vertical seams are TIG welded, ground flush, then pickled and passivated. Interior finish is 2B mill, or a #4 polish if you want tartrate and lees to release faster. A sloped bottom feeding a 2 in. tri-clamp drain gets the last of the lees out instead of leaving a puddle you have to sponge by hand.

Standard fittings are a racking port, sample valve, thermowell, and a hinged split lid with a food-grade gasket. Side-wall dimple jackets are optional. On 2500L, an unjacketed shell plus a plate chiller holds fine if your cellar stays under 20°C, but a jacket gives you real control during a fast, hot ferment. Decide this before the shell is rolled — the jacket is welded in during fabrication, not added later.

Where These Tanks Get Used

Small and mid-size wineries, fruit-wine plants, cideries running skin-contact ferments, and contract operations that need a movable vessel for must reception. Breweries occasionally order the same body for open-top sour programs.

Questions We Get Before Ordering

Can the jacket be added after delivery? No. Plan it at the drawing stage or run an external chiller loop.

What does a full tank weigh on the forks? Roughly 2.7 t of must plus the vessel. Check your forklift rating at the actual load center, not at the mast.

Do I need 316L? Only for high-chloride must, long juice contact, or aggressive cleaning chemistry. Otherwise 304 is standard practice.

Is it pressure rated? It is atmospheric. If you need spunding or CO2 head pressure, you want a closed tank with a cone and a relief valve, not this one.

Tell us your batch size, wine or fruit type, number of tanks and available floor space. We can recommend the tank volume, cooling area and configuration for your cellar.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
