We\’ve been building stills for craft distilleries, whiskey houses, and contract bottlers long enough to know the sizing conversation rarely starts with the equipment. It starts with the fermenter.
Sizing: 200L, 300L, 500L, or 1000L
A 200L system suits a taproom or a distillery running two or three days a week, and it still fills a 53-gallon barrel without a full-time crew. 300L is the step most small producers take once wholesale accounts grow. 500L and 1000L are production machines. They want steam, a boiler room, and a floor plan where a forklift can reach the manway. Comparing 500L against 1000L? Look at fermentation capacity first. A 1000L still fed by three 500L fermenters buys you idle days you still pay for.
Heating, copper, and the options that matter
Electric heating keeps urban sites simple, no boiler and no steam certification, and shutdown is a switch. Steam pays off once you\’re running back-to-back batches, since it costs less per liter and treats wash proteins more gently. Copper belongs in the vapor path: column sections, lynne arm, condenser. A stainless boiler with copper internals gets you most of the flavor profile at a lower price and much less polishing work.
Gin basket, agitator, and condenser configuration are the three options buyers most often regret skipping. The basket adds botanical flexibility for modest money. An agitator is close to mandatory on grain-in or high-solids washes.
Before we quote
Send batch size, target ABV in and out, heating preference, ceiling height, floor drain location, available voltage or boiler capacity, and destination port. With those details we can confirm dimensions, utilities, and freight in one pass instead of three.
