What a 3000L alambique actually does
A 3000L copper alambique is a batch distillation workhorse. We’ve built these for fruit brandy houses, whiskey producers, and wineries that need low wines and finished spirits from grape or pomace. At this size, you’re usually running 2–4 charges per day, depending on column configuration and steam supply.
Copper contact matters most in the pot, swan neck, and vapor path. We use 3–6 mm copper plate for the pot and copper columns where sulfur binding helps. Stainless is fine for the condenser shell, CIP lines, and support frame.

Gin basket, agitator, and condenser choices change the run more than capacity alone. A plated column gives cleaner spirit, while a simple pot still keeps more fruit character. If you run viscous fruit mash, we add a slow-speed agitator and wider drain. High-volume neutral runs need a larger condenser and packed section.
Heating choice drives utilities and floor layout. Electric 3000L systems need a serious transformer and stable voltage; steam jackets give faster heat-up and gentler control, but you need a boiler. Direct fire is possible, yet many city restaurants can’t permit it.
