Description

Wine lots change size. One block gives you 2,000 L, another presses 5,000 L, and a fixed-volume tank sized for the larger batch leaves the smaller one swimming in headspace. A floating roof tank handles both: the lid sits directly on the wine surface and drops as the level falls, so the gas blanket stays thin and dissolved oxygen pickup stays predictable.

How we build them

Shell and bottom are 3 mm SS304 as standard, with SS316L available where the cellar sees chlorinated wash water, coastal air, or long contact with high-acid must. The floating lid carries a food-grade EPDM inflatable gasket, pumped by hand or from a small air line, and rides on three guide rods so it does not cock when the tank is partially filled. We TIG weld the interior, grind flush, then pickle and passivate; wine-contact surfaces are finished to Ra 0.8 µm or better. A 450 mm manway, sample valve, and racking port are positioned so a person can actually reach the bottom corner during cleaning.

Cooling

The dimple jacket plate is resistance-welded to the shell and pressure tested at 0.6 MPa, with 0.3 MPa working pressure on the glycol side. A dimple pattern gives more turbulence than a simple half-pipe coil, which matters during a fast, hot fermentation. Jackets can cover the side shell only, or extend onto the cone for reds that need to be pulled down quickly after pumpover.

Typical specification

Material SS304 / SS316L, 3 mm shell
Cooling Dimple jacket plate, glycol or chilled water
Surface Ra 0.8 µm internal, pickled and passivated
Ports Manway, CIP spray ball, sample, racking, vent
Options Insulation, cladding, load cells, cone bottom

Questions we get before quoting

Flat or cone bottom? Flat suits white juice settling and lees racking. A shallow cone helps reds where you want pomace movement and easier solids discharge.

How much cooling area? It depends on your fermentation temperature drop, batch size, and glycol supply temperature — not just volume. Send us the numbers and we size the jacket.

Can it be cleaned in place? Yes, with a rotating spray ball matched to the tank diameter and a pump that delivers roughly 2–3 bar at the ball.

Tell us your batch size, wine type, number of tanks, and available floor space. We can recommend the volume, cooling area, and configuration for your cellar.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
