Description

10000L / 100HL Dry White Wine Fermenting Vessel

A 100HL tank sits in an awkward spot. It is too big for a pilot brewhouse and too small to ignore temperature drift. We build this vessel for wineries and beverage plants running white wine, cider, or cold-fermented beer where a 10,000 L batch needs to hold 8–16 °C without burning glycol all night.

Shell, cone, and jacket

Body and cone come in SUS304 with a 2B finish as standard. Juice with higher chloride or acid load usually points to 316L. Shell runs 3 mm, cone 4 mm, and the dimple jacket is spot-welded in a staggered pattern, then hydro-tested at 1.5× working pressure before it leaves the shop. Insulation is 80–100 mm polyurethane under a stainless cladding — on a 100HL tank, that layer decides whether your chiller cycles or runs flat out in summer.

Interior welds are ground and pickled, with a final Ra ≤ 0.8 µm on product contact surfaces. The cone angle, manway position, and racking arm height are set by how you plan to drop lees and pull clear wine, so we ask for your process before we cut plate.

Typical specifications

Inner finish Ra ≤ 0.8 µm, pickled and passivated
Cooling jacket Dimple plate, 2–3 zones
Jacket pressure 0.2–0.3 MPa working
Insulation 80–100 mm PU, stainless cladding
Connections Tri-clamp, DIN or SMS
Cleaning Rotary spray ball, CIP inlet

Questions we get before the PO

Can one tank do white and red? Jacket area is sized for the slower white ferment. Red on skins needs more cooling surface and a different cone. Tell us the split up front.

What pressure rating? Fermentation pressure stays low. If you plan sparging or carbonation in-tank, say so — the shell, relief valve, and manway clamp all change.

Do you supply the chiller and piping? We can, but most clients already have a glycol loop. Send the supply temperature and flow rate and we will match the jacket.

Small craft producers often buy one oversized tank and regret it; commercial plants usually buy in banks of four to six with a shared CIP skid. Both work, but the valve layout differs.

Tell us your batch size, wine type, number of fermentation tanks and available space. We can recommend the tank volume, cooling area and configuration for your winery.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
