What a 2000 L tank actually does for red fermentation
Most small wineries land on 2000 L when they want one vessel that can take a full picking without rebuilding the crush pad. Red fermentations at this size run 7–14 days, and the heat that comes off during the first 72 hours is what decides whether you keep fruit aromatics or boil them away. That is the only real reason a jacket belongs on the tank.
Materials and fabrication
Shell and cone are 304 stainless as standard, with 316L on product contact when the fruit is high-acid or the site is coastal. We run 3 mm on the shell and 4 mm on the bottom cone; thinner sheet oil-cans once the tank is full and warm. Interior welds are ground flush, pickled, and passivated, so no weld decay zone sits under the lees. Interior finish is 2B or 320-grit polish depending on your cleaning routine — a mirror finish is not automatically better, it costs more and shows every scratch.
Cooling, ports, and pressure
The dimple jacket wraps the side wall, with a separate cone zone if you want to crash-cool the bottom independently of the cap. Glycol at 28–30°F enters through 1.5 in tri-clamp ports. Standard layout: 2 in bottom drain, racking arm, 12 in top manway with gasketed lid, CIP spray ball, and a sample valve. Working pressure is 15 psi on the vessel and 45 psi on the jacket. Every unit ships with a relief valve sized for the jacket, not the tank — that detail gets skipped more often than any other.

Questions we get before an order
Do I need a cone? For reds, a shallow cone with a racking arm makes draining and lees separation easier. Flat-bottom tanks suit whites and storage better.
Can I run pumpover and CIP from the same fittings? Yes, if the racking arm and spray ball are on separate circuits. Sharing one line is the most common cause of stuck cap irrigation.
How much glycol chiller do I need? Roughly 1 kW of cooling per 1000 L of must during peak fermentation. Give us your ambient temperature and batch schedule and we will size the jacket area to match.
Tell us your batch size, fruit type, number of tanks and available floor space. We can recommend the tank volume, cooling area and configuration for your winery.

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
