Description
What the dimple jacket actually does for sparkling base wine
A 2000L tank with a dimple cooling jacket gets specified when fermentation temperature has to stay inside a narrow band, not just sit below room temperature. Sparkling base wine is usually fermented at 15–18°C and finished slowly; run the tank warm and you lose the delicate aromatics that later carry the mousse. Dimple jackets welded onto the cone and lower cylinder put a large cooling surface against the wine, so the chiller can pull heat out without dropping the jacket wall to freezing point and forming ice on the shell.
Materials and fabrication
We build the inner shell from 3 mm SUS304 as standard, with 316L available where the must is high in acid or where caustic cleaning is heavy. Jacket plate is 1.5 mm dimpled sheet, spot-welded first, then seam-welded to the shell. Product-contact welds are TIG, argon purged, ground and passivated. Interior finish is 2B at Ra ≤0.8 µm, with 320 grit polishing on request. Insulation is 80 mm polyurethane under 304 cladding. Each tank is hydro-tested at 1.5 times design pressure before it leaves the shop.
Where these tanks run
- Sparkling wine base and Charmat-process production
- Cider, perry and fruit wine fermentation
- Mead and low-pH mixed fermentation
- Contract wineries that need chilled, flexible tank space

Questions we get before quoting
Can I run secondary fermentation inside it? Only if the tank is ordered as a pressure vessel. A standard dimple-jacketed unit is rated 0.15 MPa. Charmat secondary fermentation at 2–3 bar needs a thicker shell, a higher-rated relief valve and pressure-rated fittings.
How many cooling zones? Two covers most 2000L duty. Three gives tighter control when you crash a full tank from 22°C down to 12°C in one shift.
Is 316L worth the upcharge? For high-acid must, long skin contact and heavy caustic CIP, yes. Otherwise 304 with correct passivation holds up well.
How does cleaning work? A rotating spray ball in the top manway covers dome and cylinder; the cone drains through the bottom outlet, and the racking arm pulls out for full recovery.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
