Description
A 30,000 L vessel is often the largest tank a winery can move on a standard flatbed without an escort permit, and that practical ceiling is one reason this size keeps appearing in mid-sized red wine programs. We build it as a vertical cylindrical fermenter with the dimple jacket welded straight onto the shell, so no cooling plates hang in the aisle and no glycol lines cross the crush pad floor.
Shell and bottom run in AISI 304 at 3 mm. We switch to 316L when the must carries elevated chloride or when the tank will double as storage after fermentation with repeated SO2 additions. The dimple jacket is resistance-welded, leaving a 2–3 mm channel that holds pressure with a low glycol volume — worth thinking about when one chiller serves the whole cellar. Internal welds are ground flush, pickled and passivated; the wetted surface leaves the shop at 2B, with 320-grit polish available for lots that stay on skins for weeks.
Where it earns its keep: primary fermentation of Cabernet, Merlot and Syrah, extended maceration, and sometimes malolactic. The jacket pattern covers the lower third plus a partial upper band, which holds 25–28 °C must temperature in a 20 °C cellar. Cold-soak work in warm regions needs full-coverage jacketing instead — tell us the ambient swing and we will size the surface area.

Questions we get before quoting
Do I need a cone bottom? Only if you plan to drop lees and seed without pumping the whole volume. Flat or dished bottoms suit reds that get pressed out.
What pressure can it take? The tank is atmospheric. The jacket is the pressure side, and it gets a relief valve matched to your glycol pump curve.
How is CIP handled? A rotating spray ball on a dedicated port, with the return line taken off the bottom outlet. We can add a second ball for wide tanks.
Small producers usually order one tank with a wide jacket and accept slower pull-down; commercial cellars buy in pairs and specify jacket coverage against a known chiller capacity. Send us your batch size, red or white program, tank count and available floor space, and we will come back with volume, cooling area and port layout.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
