Description
A 5,000 L vessel sits in the middle of the range we build. Large enough to carry a commercial sparkling wine program, small enough that two or three units fit into an existing cellar without knocking down walls.
We fabricate these tanks from 304 stainless as standard. Where chloride in the local water or in the cleaning chemicals runs high, we switch the product-contact surfaces to 316L. Shell thickness is usually 3 mm on the cylinder and 4 mm on the cone, TIG welded, then ground and pickled so no weld scale sits under a gasket line. Interior finish is 2B mill unless you ask for polishing to 0.4–0.6 µm Ra, which most sparkling producers do — tartrate and yeast deposits come off far faster from a polished wall.
Pressure capability matters because secondary fermentation happens inside the tank. Design pressure is commonly 2–3 bar, and the relief valve is set at or below the shell rating, never above it. The valve is a safety device, not a pressure regulator. If your process genuinely needs 3 bar for carbonation, order a tank rated for it and check the nameplate before the first transfer.
Cooling comes from a dimple jacket covering the cone and lower cylinder, sized around the glycol temperature you actually run. Undersized jackets are the most common specification mistake we see: a 5,000 L batch throws off heat faster than a small chiller can pull it back out, and fermentation stalls.
| Parameter | Typical Specification |
|---|---|
| Nominal capacity | 5,000 L (working volume ~80%) |
| Material | SUS304 standard, SUS316L optional |
| Shell / cone thickness | 3 mm cylinder, 4 mm cone |
| Design pressure | 2–3 bar, up to 4 bar on request |
| Cooling | Dimple jacket, cone and lower cylinder |
| Interior finish | 2B, or polished 0.4–0.6 µm Ra |
| Insulation | 80–100 mm polyurethane, stainless cladding |
| Connections | 1.5-inch and 2-inch tri-clamp |
Cleaning is handled with a rotating spray ball in the dome plus a racking arm, sample valve and thermowell. Plan your hose and CIP return routing before the tank lands on the pad; it is cheaper than moving a 5,000 L vessel twice.
Questions we get before quoting
Can this tank handle 3 bar? Yes, if the shell, cone and fittings are all rated for it. We supply a pressure test report and material certificates with every unit.
What glycol temperature do you need? Most sparkling programs run 28–30 °F supply. Send us your batch size and target crash time and we size the jacket area accordingly.
Small craft producer vs. commercial winery — what changes? Volume, jacket area and automation. A 5,000 L unit usually needs an independent glycol loop and a recorded pressure log, not a shared chiller with the rest of the cellar.
Tell us your batch size, wine type, number of tanks and available space. We can recommend the tank volume, cooling area and configuration for your cellar.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
