Description

What the Pump-Over Circuit Changes

A red ferment needs oxygen and skin contact in the first three or four days. A white must usually needs the opposite. The same vessel has to handle both, which is why the jacket layout matters more than the tank volume on paper. We cover the cone and the lower cylinder with dimple plate, so the must responds while the pump is still running, not twenty minutes later.

Materials and Fabrication

Standard builds use 304 stainless for the shell and 316L for the jacket and any wetted part that sees juice for long periods. Plate thickness runs 3 mm on tanks up to 5,000 L and 4 mm above that. Internal welds are butt-welded, ground flush and passivated; we do not leave a rough fillet where lees will collect. Interior finish is 2B mill or 320 grit on request. Seals are food-grade EPDM as standard, silicone or Viton if your cleaning chemistry calls for it. Every jacket is hydro-tested before the insulation and cladding go on.

Connections, Cleaning and Pressure

Fittings are DIN 11851 or tri-clamp, depending on what your cellar already stocks. A typical arrangement: racking arm, sample valve, CIP spray ball in the top, glycol in and out on the jacket, and a 60-degree cone for lees compaction. Working pressure is normally 1.5 bar with the relief valve set to match; never run a tank sealed without checking that valve setting. CIP works best with a rotating spray ball and 60 to 70 C caustic, followed by an acid rinse.

Questions We Get Before Ordering

Small winery or commercial scale? Below 3,000 L most clients run a single jacketed tank with a manual pump-over and a glycol chiller. Above that, zone control and automated pump timing start paying for themselves.

Do I need a variable pump? Yes for delicate varieties. A fixed high-flow pump strips color and over-aerates the must.

Can the tank be used for white juice settling? With a different lid configuration, yes. Tell us at quoting stage rather than after fabrication.

What about the floor? A 10,000 L tank with wine is roughly 12 tons on three or four legs. Confirm slab loading before you finalize the layout.

Tell us your batch size, wine type, number of tanks and available space. We can recommend the tank volume, cooling area and configuration for your winery.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
