Description

A 600L fermenter sits in an awkward middle ground. It is too large for a brewpub doing one batch a week, and too small for a regional brewery running continuous production. Where it works well is a taproom scaling past pilot batches, or a contract brewery that needs extra capacity without committing to a 20 BBL system. If that sounds like your situation, the specifications below are what we would walk through with you before quoting.

Tank body and material selection

We build this vessel from 304 stainless steel as standard: 3mm on the shell, 2mm on the dish heads. If your beer is heavily hopped or you run sour programs, 316L on the cone and bottom is worth the upcharge — chloride pitting shows up first at weld toes and in the cone where yeast and trub sit longest.

Interior welds are ground flush and passivated, then polished to under 0.8μm Ra on wetted surfaces. Exterior welds get pickled and passivated only. We do not polish the outside to mirror finish; it costs money and does nothing for sanitation.

Cooling jacket and temperature control

The dimple jacket covers the cone and lower cylinder. At 600L, that surface area handles most ale fermentations with a 2–3°C glycol supply, but lager programs run cooler and slower — buyers regularly undersize the chiller here. Tell us your fermentation curve and we will calculate required jacket area rather than reuse a standard drawing.

Working pressure is 0.2MPa on the jacket and 0.15MPa in the tank, with a pressure relief valve sized for your worst-case CO2 generation. Do not treat the relief valve as optional hardware; it is the last barrier before tank deformation.

Fittings, CIP and connections

Standard layout gives you a 1.5in tri-clamp racking port, a 100mm manway with gasket, a CIP spray ball in the top dish, and two 1.5in glycol inlets. Level and sample valves are optional. Where customers get into trouble is CIP coverage after dry hopping — a single spray ball is often not enough, so we can add a second inlet or a rotary spray head.

Typical specifications

Total volume 600L, working volume roughly 480–500L, cone angle 60°, inner pressure 0.15MPa, jacket 0.2MPa, insulation 80mm PU foam, four adjustable legs. Dimensions and port positions confirm against your floor plan before fabrication.

Buying guidance

Ask yourself three things: what is my realistic batch frequency, what is my coldest fermentation target, and how much floor clearance do I actually have. Small brewpubs usually accept a leaner jacket and one CIP inlet; commercial breweries should specify 316L contact surfaces and redundant ports from the start, because retrofitting a welded tank later is expensive.

Tell us your batch size, beer type, number of fermentation tanks and available space. We can recommend the tank volume, cooling area and configuration for your brewery.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
