Description

10000L Insulated White Wine Fermenter with Cooling Jacket

This 10,000-liter fermenter is built for white wine production where temperature control isn\’t optional. White wine fermentation generates heat that can push must temperatures past 30°C within 48 hours if left unchecked. Without a cooling jacket, you risk stuck fermentations, ester loss, and volatile acidity development. We designed this vessel to keep your fermenting juice between 14–18°C, where clean fruit character develops.

The tank is constructed from SUS304 stainless steel with a 2B finish on the product contact surface. For wineries running high-chloride washdowns or coastal installations, we can upgrade to SUS316L. Internal welds are ground flush and electropolished—no crevices for tartrate deposits or microbial harboring. The outer shell features 60mm polyurethane foam insulation with a brushed stainless steel cladding, so glycol loads stay predictable even in warm cellars.

The cooling jacket is dimple-style, covering the lower cylindrical section and cone. This gives you a working heat transfer area of roughly 25m². Combined with a properly sized glycol loop, it can drop fermenting must by 1.5–2°C per hour. We supply the tank with an integrated CIP spray ball, sample valve, and 2-inch bottom outlet. The manway on the top head allows dry-ice additions during cold soak. Pressure relief and vacuum valves are fitted as standard—a sealed tank without proper venting is a collapse or rupture risk.

FAQ

Why does white wine need a cooling jacket?
Fermentation produces about 25 kcal of heat per mole of glucose consumed. In a 10,000L tank, that heat raises temperature quickly. Without jacket cooling, fermentation stalls or produces off-flavors.

Can this tank handle red wine too?
Yes, but for reds you typically want a cone bottom for pomace removal. We can modify the cone angle or add a manway for cap management.

What glycol temperature is required?
We recommend glycol at −2°C to +2°C for white wine cooling. The dimple jacket design handles this without freezing issues.

Is the tank pressurized?
No. It\’s atmospheric, with vacuum/pressure relief. For pressurized applications, we build ASME-certified vessels separately.

How do I connect CIP and glycol lines?
Tank comes with tri-clamp fittings on the jacket inlet/outlet and CIP port. Standard 1.5-inch connections, reducers available on request.

Selecting the Right Tank

Before requesting a quote, know your batch size, fermentation duration, and cellar ambient temperature. A 10,000L tank fits 8–9 tons of must, but if you run 12,000L batches, you need a larger vessel or two tanks. Also confirm your glycol system capacity—each tank requires roughly 60,000–80,000 kcal/hour during peak cooling. Tell us your juice volume, desired fermentation temperature, target tank count, and available floor space. We\’ll recommend the correct jacket area, insulation thickness, and bottom configuration for your winery.

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
