Description

Wine fermentation puts heat into the tank, and it does so quickly. A 50,000 L lot can rise several degrees within hours at peak activity, and yeast behavior changes once the must drifts past the set point. A dimple plate jacket welded to the shell gives cooling surface across the full liquid height instead of concentrating it around a single coil.

The jacket is formed from 1.5–2 mm dimple sheet, spot welded to the shell on a 40–60 mm pitch, then inflated to open the channels. Coolant normally enters low and exits high. On tanks above 20,000 L we split the jacket into two or three independent zones, so a cold soak can run on the upper section while the lower must stays warmer for extraction control.

Shell material follows the product, not a catalog default. SUS304 handles most red and white must. SUS316L is the practical pick for high-chloride water, juice with elevated acidity, or cellars running aggressive caustic and acid cycles. Internal welds are ground, passivated and inspected; a 0.4 µm polish is available when sensory work matters.

Every tank leaves with a manway, racking arm, sample valve, CIP spray ball on its own line, and a 1.5 bar pressure/vacuum relief. Tank farms, contract wineries, cider houses and craft breweries running mixed programs order the same shell with different bottom profiles and fitting layouts.

Jacket working pressure 0.3–0.5 MPa

Insulation 50–100 mm PU or rock wool, stainless cladding
Bottom profile Flat, dished, or 60° conical

Questions we get from winemakers

Does a conical bottom matter? For reds and yeast recovery, yes. A 60° cone lets you drop lees without pumping. Flat and dished bottoms suit white juice settling and storage.

How many cooling zones? One zone is usually enough to about 10,000 L. Above that, two or three zones keep temperature uniform and cut coolant flow.

CIP and sanitation? Spray ball coverage is verified before shipment. The jacket circuit is closed loop and never contacts product.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
