Description

What this vessel does

Wineries running 1,000–1,200 L must charges usually land on a 1,500 L tank: enough headspace for a red cap and for the foam that shows up in the first 48 hours. The dimple cooling jacket is not decoration. An active red ferment can push 25–30°C on its own, and past 30°C you start trading away color stability and aroma. Jacketing both the cylinder and the cone lets glycol pull heat from the must and the cap at the same time.

Materials and fabrication

We roll the body and cone from SUS304, 3 mm on the product side and 2 mm on the outer shell, and weld with argon backing gas. Seams are ground, pickled and passivated. The internal finish reads 0.4–0.6 μm Ra, which keeps tartrate and lees from locking onto the surface during a normal CIP cycle. When juice runs high in chloride, or the cellar favors aggressive acid cleaning, the wetted parts move to 316L.

Dimple jackets are resistance-welded to the cylinder and the cone as separate zones, each with its own glycol in and out, so the cone can be cooled while the cap is still working. Insulation is 80 mm PU foam under stainless cladding. Thin insulation is the most common cost cut we see on imported tanks, and it shows up later as condensation and glycol consumption in a warm cellar.

Standard fittings: 60° cone with racking arm, 400 mm top manway, CIP spray ball, sample valve, thermowell with RTD, pressure relief valve, tri-clamp glycol ports. Working pressure 0.2 MPa, jacket tested at 0.3 MPa.

Questions we get before an order

Cone or flat bottom? A cone earns its cost when you rack off lees and drop the cap without opening the manway. For juice settling or pure storage, a shallow cone or flat bottom is cheaper and easier to clean.

Can it double as an aging tank? Yes, if the pressure rating and closure suit your inert gas practice. Tell us the gas pressure you intend to hold, not just the volume.

What glycol supply is needed? Zone area and cellar temperature set the chiller size. Send us your must temperature target and ambient conditions and we will size it.

Tell us your batch size, wine type, number of fermentation tanks and available space. We can recommend the tank volume, cooling area and configuration for your winery.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
