Description

Where a 5000 L floating top tank fits

A 5000 L vessel holds roughly four to five tonnes of crushed red must, so it suits wineries working in small-lot varietal blocks rather than one large blend. The floating top is the reason buyers pick this shape. The lid sits directly on the cap, so headspace stays small as the volume drops after pressing, and cellar staff punch down through the center hatch without swinging open a full manway. For reds with extended maceration, that access pattern saves real time during harvest.

Material and fabrication notes

Bodies are rolled from 3 mm stainless, with 4 mm plate on the bottom where the weight and the drain load sit. Grade choice usually comes down to cleaning chemistry: 304 covers most red programs, while 316L makes sense when juice pH runs low and the plant water carries chlorides. Dimple jackets are resistance spot-welded to the shell before insulation, then hydro-tested at 6 bar even though the glycol side rarely sees more than 3 bar working pressure. Interiors get a 2B finish with welds ground and passivated. The lid carries an EPDM or silicone gasket and a food-grade edge seal that should be replaced each season.

Cooling and connections

Jacket area is sized from your glycol supply temperature and the drop rate you need during peak fermentation. On a 5000 L tank we typically weld 4 to 6 m2 of dimple jacket across the lower body and bottom. Standard fittings: 1.5 inch racking arm, 2 inch drain with butterfly valve, 1.5 inch sample valve, CIP spray ball, two Pt100 thermowells, glycol in and out, and a 1 inch vent with CO2 relief.

Working volume 4500 L (5000 L total)
Shell material 304 or 316L stainless
Jacket pressure 3 bar working
Insulation 80 mm polyurethane
Interior finish 2B, passivated welds
Top Floating lid, gasketed, center hatch
Bottom Flat with sloped drain

Questions we get before quoting

Can the same tank handle white juice? Not well. Whites need a closed top and inert gas blanket, so the floating lid becomes a liability.

Does it clean by CIP? The body does. The lid still needs manual scrubbing, since spray balls cannot reach under it.

Flat or cone bottom? Floating top tanks are almost always flat-bottomed; a cone only pays off on closed tanks where you dump gross lees under pressure.

Tell us your batch size, grape variety, number of tanks and available ceiling height. We can size the jacket area, glycol flow and fitting layout for your cellar.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
