Description
Red must behaves differently than wort
Skin contact, higher solids, and a warm cap sitting on top of the liquid make a red ferment a rougher duty than a beer tank usually sees. Temperature drift in the first two days moves color and tannin extraction further than most winemakers expect, so the jacket on these tanks covers the cone and the lower cylinder, not a narrow strip near the bottom.
How we build them
Bodies are rolled from 304 stainless: 2 mm wall on 100–300 L units, 3 mm from 500 L up. If your must is high-acid or you run low-pH protocols, we quote 316L instead. It costs more, and we would rather ask about your juice chemistry than sell it to you by default. Interior welds are ground flush and passivated, and we leave the finish at 2B. A mirror polish photographs well and scratches the first week a punch-down tool goes in.
Dimple jackets are formed on the cone and lower shell, then hydro-tested at 1.5× working pressure before the tank leaves the floor. Standard fittings: 15 psi adjustable relief valve, sample valve, 1.5\” tri-clamp racking port, and a gasketed clamp lid. Glycol connections are 1/2\” NPT unless your chiller runs tri-clamp.
Typical installations
- Home wineries running 50–500 L lots, red and white
- Small commercial cellars holding separate temperature profiles per lot
- Cideries and fruit fermenters using the same cold-crash routine

Questions we get before the PO
Cone or flat bottom? A cone drains clean and lets you rack without tilting the tank. Flat bottoms cost less and work fine for whites pressed straight to tank.
Can I clean it in place? Yes. A spray ball on the lid port with a pump and warm caustic handles it. Hand-scrubbing a 1000 L tank is not a realistic routine.
What chiller size do I need? Send batch volume, target temperature, and ambient cellar temperature. Jacket area gets sized to pull a 30 °F drop overnight.
Tell us your batch size, wine type, number of fermentation tanks and available space. We can recommend the tank volume, cooling area and configuration for your cellar.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
