Description

The 2000L and 3000L sizes sit in an awkward middle ground. They are large enough that temperature control genuinely affects flavor, and small enough that breweries try to save money by skipping jackets or buying one oversized unit. Both shortcuts usually get revisited within a year.

We build these as dimple-jacketed conical fermenters in SUS304, with SUS316L available for sour programs or aggressive chloride cleaning. Shell and dish ends run 3 mm, jackets 1.5 mm, TIG welded throughout, welds ground and pickled, internal surface finished to Ra ≤0.6 µm. Each tank is hydro-tested and the jacket pressure-tested before it is crated.

Capacity and geometry

A 2000L tank handles roughly a 1500–1800L knockout once you leave krausen headspace; the 3000L covers 2400–2700L. Standard cone is 60° for ale and lager work; go 70–75° if you dry hop heavily or ferment with fruit. When yeast harvesting matters, the cone angle and bottom outlet size affect your results more than total volume does.

Cooling, pressure and CIP

Cone and lower-cylinder jackets carry you through active fermentation. Add a second cylinder zone if you crash cool inside 24 hours. Working pressure is 0.2 MPa as standard, 0.3 MPa on request, and the relief valve is the authority on that limit — never set carbonation pressure without reading it. Cleaning runs through a rotating spray ball in the top manway, with 1.5\\\” TC ports for racking arm, sample valve, dry hop, pressure gauge and blow-off.

Questions buyers raise

Can one tank serve as fermenter and bright tank? Yes, with a rated pressure and a carbonation stone port, though you lose the flexibility of fermenting while carbonating elsewhere.

Do I need 316L? Only if your process demands it. Most ale and lager production runs happily in 304 with proper passivation.

How much floor space? Plan for roughly the tank diameter plus 800 mm of working clearance for valve access and manway swing.

Tell us your batch size, beer type, number of fermentation tanks and available space. We can recommend the tank volume, cooling area and configuration for your brewery.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
