Description
Built for open-top red fermentation
Wineries keep coming back to open-top tanks because punch-down and pump-over are easier when you can actually see the cap. We build these 5,000 L and 8,000 L vessels with a removable or hinged lid, a sloped bottom for must drainage, and a cooling jacket welded to the side wall. Where fermentation rooms run warm, a second jacket zone or a bottom jacket lets you crash the must faster after pressing.
Fabrication details
Shell and bottom are 3 mm SUS304; 316L is available when juice or cleaning chemistry is aggressive. Internal welds are ground flush and passivated, then finished to 2B or, on request, mirror-polished to Ra 0.8 µm for easier cleaning. The cooling jacket is dimple-plate or laser-welded channel, hydro-tested at 1.5 times working pressure with the test record shipped alongside the tank. Between shell and jacket we apply 50 mm polyurethane insulation and stainless cladding, which keeps condensation under control in humid cellars.
Where they fit
Red must fermentation with manual cap management, white juice settling, cold soak, and short-term storage. A winery handling 5 to 15 tons per harvest typically pairs one 8,000 L tank with two or three 5,000 L units so individual lots stay separate.

FAQ
Do I need a bottom jacket? Only if your glycol supply is limited or you need rapid temperature drops after fermentation. A side jacket alone handles most red fermentations.
Can it hold pressure? Open-top tanks are atmospheric. If you plan to sparge or run closed fermentation, specify a different vessel with a rated manway and pressure relief valve.
How is it cleaned? A spray ball on the lid with a CIP pump circuit works for most cellars; the polished interior and flush welds keep residue from collecting at seams.
What do I need to specify? Harvest volume, number of lots, glycol temperature, available ceiling height, and floor drain position. Those four details determine diameter, jacket area, and fitting layout.
Tell us your batch size, number of lots, available space and glycol supply temperature. We can recommend the tank volume, jacket configuration and fitting layout for your cellar.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
