Description
Fermentation temperature decides whether a cider finishes clean or turns sharp, and whether a red lot keeps its fruit. A dimple cooling jacket gives the tank enough contact area to pull heat during the first 48 hours, when yeast activity peaks, and to hold 8-10 C for a cold soak without short-cycling the glycol loop.
We build these vessels from 500 L to 5000 L in SUS304, or 316L when the product is high-acid or the plant washes with chlorinated water. Inner shell is 3 mm plate; the dimple jacket is 1.5 mm sheet welded to the lower cylinder and cone. Interior welds are ground, pickled and passivated to 0.4-0.6 um Ra. Exterior carries 80-100 mm polyurethane insulation under brushed 304 cladding. Cone angle is 60 degrees for yeast dropout, 72 degrees if the tank also serves as a settling vessel.
Ports and connections
- Top: 400 mm manway, CIP spray ball, dry-hop port, pressure relief valve, gauge
- Side: racking arm with 1.5 in tri-clamp outlet, sample valve, thermowell (PT100)
- Jacket: 1 in BSP or tri-clamp inlet/outlet, glycol rated to 3 bar, hydro-tested at 4.5 bar
- Vessel working pressure 1.5 bar; the PRV is set to match, not above
Capacity reference
| Volume | Use | Cooling area |
|---|---|---|
| 500-1000 L | Pilot batches, trial cider blends | 2.0-3.0 m2 |
| 2000-3000 L | Small craft cidery, taproom supply | 4.0-6.0 m2 |
| 4000-5000 L | Commercial winery, contract production | 7.5-9.0 m2 |
What buyers ask us
How do I know the jacket area is enough? Send us batch volume, starting gravity and your glycol supply temperature. A 20 C drop in 24 hours needs noticeably more area than a slow cold soak.
Can I run CIP through it? Yes. A rotating spray ball at the top plus a drain in the cone is standard; we can add a second ball for tanks over 3000 L.
Small cidery versus commercial plant? Pilot tanks usually take fixed legs and a single-zone jacket. Larger plants typically move to three-leg support, dual-zone jackets and a racking arm sized for pump transfer.
Tell us your batch size, beer or cider type, number of fermentation tanks and available space. We can recommend the tank volume, cooling area and configuration for your brewery.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
