Description
We build 2000L and 3000L copper column systems for distilleries moving past pilot batches into daily production. Most of these orders come from people already running a 300L or 500L pot still who are tired of stripping wash in small charges. The jump in tank size isn\’t the hard part. Matching column diameter, condenser capacity, and heating to the wash you actually ferment is.

Where copper actually belongs
Red copper goes where vapor and liquid touch: the plates, the neck, the condenser tubes. We keep the outer shell in stainless. It holds heat the same way and costs less. A full copper shell photographs well in a tasting room, but it adds weight, freight, and polishing work without changing what comes off the parrot.
Steam or electric
Steam is more stable and cheaper per liter once you\’re boiling 3,000L a day. Electric suits rural sites without boiler capacity, but pull your panel numbers first, because a 2000L electric still loads hard at startup. We\’ve shipped both; the deciding factor is usually what utilities the building already has.
Options worth settling early
Gin basket in the column, pot agitator, CIP spray balls, sight glasses, and a flow-metered parrot. On 3000L units we also raise the column base to fit a floor drain under the pot.
What to send before we quote
- Wash ABV and target bottling proof
- Steam pressure available, or your electrical supply
- Ceiling height and floor loading at the install spot
- Local pressure-vessel rules and site inspection requirements
