Description

What a 500 L Vessel Actually Does in a Cellar

A tank of this size rarely has one job. In September it may hold a small lot of must during cold soak. By spring it carries a blending trial. Through summer it stores finished wine waiting on filtration or the bottling line. We build these as general-purpose holding and storage vessels, so the fittings, the cooling surface and the drain geometry end up mattering more than the silhouette.

Fabrication Details We Do Not Shorten

Shell is 304 stainless at 2 mm for a 500 L working volume. We switch to 316L when wine sits for months, or when the cellar runs aggressive acid cleaning. Interior welds are ground flush and passivated; the wetted surface is polished to 0.4–0.6 µm Ra. Outside finish is #4 brushed, or mirror polish if the tank will stand in a tasting room where people look at it.

Standard fit-out: 400 mm top manway, 1.5 in. sample valve, racking arm, CIP spray ball, 1.5 in. tri-clamp drain at the cone, and a dimple-plate jacket on the side wall. Gaskets are EPDM or silicone. Silicone survives ozone better; EPDM is cheaper and handles standard peracetic CIP without trouble.

Temperature Control

With roughly 1.2 m² of jacket area and glycol at 0 °C, the tank will pull a 20 °C must down to 12 °C overnight and hold it there. Dual-zone jackets are worth the extra cost when you use the same vessel for both red and white programs and want independent control top to bottom.

Where These Tanks Get Used

  • Small-lot red and white holding between press and barrel
  • Blending and topping vessels in a working cellar
  • Finished wine storage before filtration and bottling
  • Juice and must holding at small wineries and custom crush facilities

Questions We Get Before Orders

Can this tank ferment red wine? It can hold and cool must, but a closed-top fermenter with a deeper cone, larger cooling area and pressure rating for cap management will serve you better. We usually push clients toward a dedicated fermenter and keep this vessel for storage.

How much chiller do I need? A 1 hp unit holds one 500 L tank comfortably. Sizing for several tanks means adding per-tank load rather than buying one oversized chiller.

Can fittings be customized? Yes. Port positions, valve brands, level sensors and cone angle are all open for adjustment at the drawing stage.

Tell us your batch size, wine type, number of vessels and available floor space. We can recommend tank volume, cooling area and the right configuration for your cellar.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
