What Changes When a Fermenter Reaches 50 BBL

A 5000 L unitank is rarely anyone\’s first purchase. It shows up when a brewery is running double or triple brews a day and the cellar can no longer keep pace with the brewhouse. Regional craft producers, contract canning operations, and beverage plants adding a fermented line are the usual buyers. At this volume, geometry, cooling area, and cleaning access matter far more than any single line on a spec sheet.

Build Details That Decide Long-Term Performance

Shell, cone, and dished top are formed from 304 stainless as standard. We move to 316L when the customer runs kettle sours, brews with high-chloride water, or produces non-beer fermented beverages. Plate thickness is typically 3 mm on the cylinder and 4 mm on the cone in this size range. Interior welds are full penetration and ground flush, then pickled, passivated, and polished to Ra ≤ 0.8 µm. The exterior is normally 2B finish; mirror polishing is available for tanks placed behind glass in a taproom.

Cooling comes from dimple or laser-welded jackets — one on the cone, one or two on the lower cylinder — sized so a full 50 BBL batch can be crashed from 68°F to 34°F in a reasonable window using your existing glycol chiller. Undersized jackets are the most common reason a new tank underperforms, so we calculate cooling surface against batch volume and your chiller\’s supply temperature before quoting.

The cone runs at 60°, which drains yeast cleanly and lets the vessel double as a conditioning tank after dumping. Working pressure is normally 1.5–2 bar, matched with a pressure relief valve, and the top dome carries a CIP spray ball so cleaning does not require anyone to climb the tank.

Questions That Come Up Before an Order

Fermentation and conditioning in one vessel? Yes, provided the pressure rating and jacket area support carbonation and cold crash. Breweries chasing very tight turnaround often split the duty across dedicated bright tanks instead.

Do I need a separate CIP loop? The tank is CIP-ready, but you still need a pump, caustic and acid reservoirs, and enough flow to hit the spray ball at the required pressure. A 50 BBL tank will not clean properly on a small portable cart.

How much headspace should I leave? Plan on roughly 20–25% above the nominal fill for krausen, especially on high-gravity ales and lagers with vigorous fermentation.

Before You Request a Quote

Layout constraints usually decide the final configuration — ceiling height for the tank plus CIP arm, door width, floor loading, and how close the glycol header can be run. Send us your building dimensions along with your process details and we can flag problems before the steel is cut.

Tell us your batch size, beer type, number of fermentation tanks and available space. We can recommend the tank volume, cooling area and configuration for your brewery.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
