2000L Conical Fermenter: What It Actually Does in a Working Brewery

A 2000L (20HL) conical fermenter sits in the sweet spot for a production brewery running 10–20BBL batches. It is large enough to justify jacketed temperature control and a dedicated CIP loop, but still small enough that two people can manage yeast harvesting and dry hopping without a scissor lift.

We build these vessels with a 60-degree cone, which is the practical threshold for trub and yeast to slide down without bridging. Shallower cones look fine on a drawing and become a problem after the third or fourth generation of repitching.

Materials, Welding, and Surface Finish

Product contact surfaces are 304 stainless as standard. If you are fermenting sours, fruit beers, or anything with a long acid exposure, we recommend 316L for the cone and bottom outlet. Tank bodies are 3mm, with 4mm on the cone for structural rigidity under pressure.

All internal welds are purged and ground flush, then pickled and passivated. We target an internal Ra below 0.8µm, and below 0.4µm on request for highly hopped or hazy styles where hop debris tends to cling. The exterior gets a #4 brushed finish or mirror polish depending on your brewhouse aesthetic.

Cooling Jacket and Pressure Ratings

The dimple jacket on the cone and lower cylinder handles the bulk of fermentation heat, typically plumbed to a glycol loop at 28–30°F. A separate upper jacket helps during crash cooling and diacetyl rests. Working pressure is 15psi on the tank and 45psi on the jacket, with a certified pressure relief valve, racking arm, and sample valve included.

Four heavy-duty legs with leveling feet come standard. CIP is handled through a rotating spray ball in the top manway, sized to match your pump curve.

Common Questions

How many tanks do I need? For a 20HL brewhouse on a 7-day fermentation cycle, plan on six to eight fermenters per core beer. Add one for seasonals.

Can I use this for lagers? Yes, but lager schedules run 2–3 weeks, so tank count doubles.

What utilities do I need? A glycol chiller sized to at least 1.5x your total fermenter heat load, plus a CIP pump and caustic supply.

Tell us your batch size, beer type, number of fermentation tanks and available space. We can recommend the tank volume, cooling area and configuration for your brewery.

Customer Review

We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
