Description
Pressure Tanks for Secondary Fermentation, 500L to 5000L
Sparkling wine gets its bubbles from a second fermentation. When that fermentation runs in a tank instead of a bottle, the vessel has to hold pressure, hold temperature, and let you keep yeast in contact with the wine. That is what this tank is built for. We make it from 500L up to 5000L, with a top-entry agitator and a dimple cooling jacket covering the cone and lower shell.
Material and fabrication
Standard build is 304. Choose 316L when the wine carries high chloride or the winery runs aggressive acid cleaning cycles. Wine contact surfaces are ground to 0.4–0.8 µm Ra. Pressure joints are full-penetration TIG, argon purged, then polished flush so there is no crevice for yeast to sit in. Every vessel is hydro-tested at 1.5× design pressure before it leaves the shop.
Pressure, cooling, agitation
Design pressure usually lands between 3 and 6 bar, depending on your target CO2. The relief valve is sized to the vessel, not to the compressor — an oversized valve on a small tank is a mistake we see often. Glycol at −4 °C through the jacket holds 12–14 °C through fermentation. The agitator runs at variable speed: low RPM keeps yeast in suspension, higher RPM blends dosage liquor.
CIP and connections
Rotating spray ball, 1.5\” and 2\” tri-clamp ports, racking arm, sample valve, and separate CIP and glycol returns. Bring glycol in low and return it high.

Choosing a size
A 500–1000L unit suits trial lots and small houses. 2000–5000L tanks are production work. Two 2000L tanks usually beat one 4000L tank — you keep blending flexibility and you are not shutting down an entire batch for cleaning.
FAQ
Can it carbonate as well? Yes, with a carbonation stone port and a higher design pressure.
Do I really need 316L? Only if your wine chemistry or cleaning regime demands it. Plenty of sparkling houses have run 304 for decades.
What do you need to quote? Batch size, target CO2 volumes, available glycol temperature, floor space and ceiling height.
Tell us your batch size, wine type, number of tanks and available space. We can recommend the tank volume, cooling area and configuration for your winery.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
