Description
Most 10,000 L fermenters we build go into breweries running a 50 hL brewhouse on a double-brew day, or a 100 hL brewhouse that fills the tank in one turn. The vessel is a cylindrical-conical unitank: 100 hL working volume, roughly 12,000 L gross once you allow headspace for krausen and top pressure.
Typical dimensions are 2,400 mm shell diameter, 2,400 mm straight side, 60-degree cone, about 5,600 mm overall height including legs. If your ceiling is lower, we can go to 2,800 mm diameter with a shorter cylinder. The cone angle stays at 60 degrees either way, because shallower cones make yeast dumping unreliable and leave trub sitting on the slope.
Material and fabrication
Inner shell is 3 mm SUS304 as standard, and 316L when the beer is heavily hopped, sour, or your CIP chemicals run hot and aggressive. Outer cladding is 2 mm over 80 mm injected polyurethane. Interior welds are ground and passivated. Product-contact surfaces are finished to 0.4-0.6 micron mechanical polish, or 0.8 micron if you would rather hold the cost down; most ales do not need finer than that.
Cooling comes from dimple-plate jackets: two on the cylinder, one on the cone, each with its own solenoid valve and RTD. Independent cone control during crash cooling matters more in practice than total jacket area on a datasheet.
Pressure, CIP and connections
Design pressure is 3 bar with 2 bar working pressure, a spring-loaded safety valve set at 2.5 bar, and a separate vacuum relief. A 360-degree rotating spray ball handles CIP, and you need 2.5-3 bar at the ball to wet the whole dome. Standard fittings include a 450 mm top manway, dry hopping port, racking arm, sample valve, pressure gauge, blow-off, and 1.5 inch tri-clamp glycol inlets.

Questions we get before quoting
Can one tank handle both ale and lager? Yes, but lagering in a 100 hL unitank ties up capacity for weeks. Many customers ferment here and lager in a separate bright tank.
Do I need 316L? Only if your process demands it. Sour programs, high chloride cleaning regimes, and long-acid-contact beers justify it. Standard ales do not.
How much glycol do I need? Size the chiller for crash cooling from 18 to 2 C in about 24 hours, not for steady fermentation. That is where undersized systems fail.
Tell us your batch size, beer type, number of fermentation tanks and available space. We can recommend the tank volume, cooling area and configuration for your brewery.

Customer Review
We have been using this still for a few batches now making whiskey, gin and a few other spirits and we are very happy with the results so far. The gear works well and gives good control during distillation. The spirit comes out clean and consistent from batch to batch and we have gotten the flavor profile we were looking for. It has also been easy to operate and maintain. It has been a great addition to our distillery and I’d definitely recommend it to other craft distillers looking for reliable equipment.”
